Today I was very brave, I tasted Tete Roulee or rolled head. It was served in a very presentable manner, on a platter with other cold cuts or charcuterie.
Nice salami, ham and Italian ham ... yum delicious.
Tete Roulee is bits of pigs head and tongue cooked with carrots, celery, spices, all mashed together with gelatin (which by the way is made from animal hooves).
It doesn't look so bad.
I tasted it. It wasn't so bad. But I couldn't get past the weird gelatinous texture and the fact that it had pig tongue in it.
Voila! Gros bisous et a demain!
