What I am about to say might sound silly. Here goes. I knew that I had to live in France one day when I tasted my first real French vinaigrette made by a real French person. Like I said, silly. It's true though, now I never put any thing on my salads other than a good old fashioned vinaigrette. So I shall share the recipe with you all!! Dun-dun!
In a small bowl put in: freshly ground pepper, salt, a tablespoon of a good quality mustard, and a titch of your favorite vinegar (I like balsamic). Whisk it together.
Still whisking, slowly add a good quality olive oil. Whisk, whisk, whisk until it's nice and creamy. Poke your finger in, taste, and see if it needs more oil. And that's it!
I make a fresh batch for every salad. Sometimes I mix it up by changing the mustard, or the vinegar (you can get some really great flavored vinegars these days), or the oil (loads of different oils out there).
I recently discovered turnip oil! I know, sounds weird, huh? But boy is it good!!!! I made sure to use a weaker flavored vinegar with it so as not to overwhelm the turnip oil--you don't want them vying for attention!
